Joliet’s restaurant and retail footprint continues to expand across the city with new openings, planned developments, and emerging retail movement signaling steady economic activity across Joliet.
Recent activity includes a newly opened Jack in the Box on Jefferson Street, a planned Culver’s at the Rock Run Collection, and Casa Catrina now operating in the downtown Union Station area.
Jack in the Box Expands After 2025 Return

Jack in the Box has opened at 2307 W. Jefferson St., Joliet, IL, taking over a former Arby’s location along one of the city’s busiest commercial corridors.
The company originally operated in Joliet from 1968 until the late 1970s, before leaving the area. After more than four decades away, the brand returned to the area in 2025 with a location at 2101 Route 59, Plainfield, IL.
The Jefferson Street restaurant, which opens in April 2026, represents the next phase of that expansion. Together, the two locations reflect a greater push into the Joliet and southwest suburban market.
Culver’s Plans Expansion on the West Side

Culver’s is planning a new location 1301 Shale Road within the Rock Run Collection near Interstate 55 and Route 59, one of the largest ongoing commercial developments in Joliet.
The chain already operates at 219 S. Larkin Ave, and the planned addition would further expand its footprint as growth continues along the Route 59 corridor. No official construction or opening timeline has been announced. The Joliet City Council approved the drive-thru plans for this location in March 2026.
Casa Catrina Opens in Downtown Joliet

Casa Catrina is now open at 50 E. Jefferson St., Joliet, IL, bringing a new Mexican dining option into the city’s downtown, inside the Union Station area.
JCN visited Casa Catrina, and the space was already filled, with a steady flow of customers and most tables occupied. Service remained consistent despite the crowd, and food was served quickly.
The early crowds suggest strong demand, though the restaurant may begin to feel tight on space during peak hours.
Ricky Rockets Fuel Center Under Construction

Construction is underway at the intersection of Route 59 and Black Road for the Ricky Rockets Fuel Center project, a large-scale development expected to support increased traffic tied to nearby growth.
The project sits near the Rock Run Collection and reflects continued investment along one of Joliet’s fastest-growing corridors. No opening date has been announced.
Trader Joe’s Could Target Joliet Location

Joliet may soon see a new grocery option, as Trader Joe’s is expected to open in the former JoAnn Fabrics space at 2741 Plainfield Road, Joliet, IL, near Louis Joliet Mall.
The JoAnn store closed last year, leaving a large retail vacancy along a heavily trafficked commercial stretch. While no official opening date has been confirmed, the potential addition of Trader Joe’s would mark a significant retail win for the city and align with ongoing development in the surrounding corridor.
Joliet’s economic growth is taking place across multiple fronts. Commercial turnover along Jefferson Street continues to bring new businesses into existing spaces, while developments near Route 59 and I-55 point to long-term expansion. Downtown additions like Casa Catrina are also helping draw consistent foot traffic into the city’s downtown activites.
If confirmed, a Trader Joe’s location would further strengthen Joliet’s retail mix and reflect increasing demand for national grocery brands in the area.
